Oatmeal Cherry Cookies
Beat first seven ingredients together.
Mix remaining dry ingredients in another bowl.
Combine liquid and dry ingredients, stir well.
Let sit for 10 minutes to firm up.
Drop by 2 T- portions onto prepared baking sheet.
Flatten slightly and shape.
Bake at 350° for 25 minutes.
*May substitute raisins or other dried fruit for cherries.
- 1/2 C Honey
- 1 Tbsp Molasses
- 1/2 C Oil
- 1 tbsp Vanilla
- 1 tsp Salt
- 1/2 C Soy milk
- 3/4 C Walnuts
- 3/4 C Dried cherries*, soaked in hot water, drain water
- 2 1/2 C Quick oats
- 1/4 C Whole wheat flour
- 1/4 C Unbleached or whole wheat white flour
