Mediterranean Bean Salad

4 C Cooked brown rice
1 Can Kidney beans, drained
1 Cucumber, slices
1-2 Tomatoes, diced
1 Can Artichoke hearts (water-packed), drained & sliced
1/3 C Lemon juice
2 tbsp Olive oil (or less)
  Salt to taste
  Herbs to taste - basil, oregano, garlic, etc.
  • Mix all ingredients well & chill before serving
  • Great quick-fixer for a picnic – just fix it, put it in the ice chest, and you’re ready to go!
  • Good lunch box main dish for school or for the office.
