Oatmeal Cherry Cookies
| 1/2 C |
Honey |
| 1 tbsp |
Molasses |
| 1/2 C |
Oil |
| 1 tbsp |
Vanilla |
| 1tsp |
Salt |
| 1/2 C |
Soy milk |
| 3/4 C |
Walnuts |
| 3/4 C |
Dried cherries*, soaked in hot water, drain water |
| 2 1/2 C |
Quick oats |
| 1/4 C |
Whole wheat flour |
| 1/4 C |
Unbleached white flour |
- Beat first seven ingredients together.
- Mix remaining dry ingredients in another bowl.
- Combine liquid and dry ingredients, stir well.
- Let sit for 10 minutes to firm up.
- Drop by 2 T- portions onto prepared baking sheet.
- Flatten slightly and shape.
- Bake at 350° for 25 minutes.
*May substitute raisins or other dried fruit for cherries.
