Tasty Tofu Scrambler

Extra-firm, water-packed tofu (do not use silken tofu), drained and mashed |
| 3 tbsp |
Olive oil |
| 3/4 tsp |
Salt |
| 1/2 tsp |
Turmeric |
| 1/2 tsp |
Garlic powder |
| 1 tsp |
Onion powder |
| 1/3 C |
Nutritional yeast flakes |
Optional additions:
Fresh, chopped chives or dices onions
- Combine all ingredients in a hot, nonstick skillet.
- Stir and turn frequently with a spatula.
- Continue cooking while excess water evaporates.
- Scrambled tofu is ready to serve when all the excess water has been cooked out and tofu starts to brown.
- Makes two smoothies.

Scrambled tofu is a delicious scrambled egg alternative and tastes great served with toast or whole grain bagels for breakfast. It works equally well as a quick dinnertime entree served with steamed brown rice and a tossed green salad.
