Tasty Tofu Scrambler

1 lb
Extra-firm, water-packed tofu (do not use silken tofu), drained and mashed
3 tbsp
Olive oil
3/4 tsp
Salt
1/2 tsp
Turmeric
1/2 tsp
Garlic powder
1 tsp
Onion powder
1/3 C
Nutritional yeast flakes

Optional additions:
Fresh, chopped chives or dices onions

  • Combine all ingredients in a hot, nonstick skillet.
  • Stir and turn frequently with a spatula.
  • Continue cooking while excess water evaporates.
  • Scrambled tofu is ready to serve when all the excess water has been cooked out and tofu starts to brown.
  • Makes two smoothies.

Serving suggestions:
Scrambled tofu is a delicious scrambled egg alternative and tastes great served with toast or whole grain bagels for breakfast. It works equally well as a quick dinnertime entree served with steamed brown rice and a tossed green salad.
